Their decision to move to Spain stemmed from a desire for a more affordable coastal lifestyle. “We felt we could learn Spanish compared to other languages such as Portuguese or Greek,” Amanda explained. Valencia, with its vibrant culture and picturesque coastlines, emerged as their top choice.

Reflecting on life in Valencia, Amanda expressed genuine satisfaction, noting how it surpassed her expectations. The couple, avid travelers, found themselves indulging in the vibrant European travel opportunities, averaging at least five trips a year.

They have traveled extensively whilst living in Europe and are often called on to be resilient when mishaps occur. Last summer was an example as Amanda and Herman were trapped in the heat dome that sat over most of Southern Europe during the month of July. Having planned a trip to Italy and Albania, they found themselves running from the coast due to the heat, crowded beaches and lack of services. They quickly changed plans and headed north into the mountains completely transforming their experience from one that was slightly nightmarish to incredible.

This past January (2024) they went to Tanzania on a trip of a lifetime where they experienced a customised safari. The amazing lodges, animals, people and natural beauty were indescribable. Their favourite landscape was in the Ngorongoro Crater which is a must see for anyone traveling to Africa.

As a professional chef, Amanda’s palate gravitated towards Valencia’s diverse culinary scene, appreciating its international offerings and fresh market produce. While Spanish cuisine wasn’t their primary choice, they found delight in local delicacies like puntillas.

Adapting to the Spanish lifestyle posed linguistic and cultural challenges, but the couple embraced language classes and adjusted to the city’s provincial nature. They found solace in the community’s serenity and joy, contrasting it with the bustling pace of American life.
